The Story

Our Olive Oil

Our olive grove lies on a hillside just outside the fenced property garden and stretches along the road leading to the Main House on an area of about 3 hectares. In the grove there grow about 730 olive trees of 7 different varieties.

The grove is tended to manually and using chemical-free organic products.
Our olives ripe in the trees and are picked before falling down, usually in late October - early November, thus preventing them from bruising and preserving their taste.

After the pick, the olives are immediately taken to the mill. No chemicals are used throughout the processing and only the unrefined oil derived from the first soft pressing of the olives is bottled.

All of this is what makes our extra-virgin olive oil a first-class oil with a unique taste and fragrance.
